As mentioned in my previous blog posts on Amar.rest, sharing my discovery of rising star chefs and must visit restaurants in an inspiration. Today, it is my pleasure to present the restaurant MI AMOR, by Paul Bentley, located in the Tulum hotel zone, oceanfront.

When you enter the hotel, the unobstructed view to the ocean is spectacular. Mi Amor is a very pleasant small restaurant with open floor-to-ceiling window, pool on one side and ocean-view terrace on the outside.

Mi Amor, by Paul Bentley, exhibits the signature and philosophy of its Australian star chef in Mexico, impacting the culinary scene in various places. In Guadalajara, with his casual haute cuisine restaurant Magno Brasserie which received the 2016 Gourmet Awards as best new restaurant in the country; in addition to Bovine in San Miguel de Allende, his recent Bonito Pop Food in Mexico City and of course Mi Amor in Tulum.

Chef Bentley’s formal training comes from working withlegendary and 3 Michelin Stars French chefs Paul Bocuse and Pierre Gagnaire. Though Paul’s roots are in Fine Dining, he rejects its usual formality in favor of a casual fine dining concept, with a focus on simplicity and fresh local ingredients, distinctive strong tastes and very appealing presentations.

 

On April 5th, I was accompanied by Diego, the Wine & Food Festival’s Culinary Director, for a lunch tasting menu. The menu presented a strong spirits mixology program, with multiple champagnes and Italian sparkling cocktails, romantically named Romeo & Juliet, Adam & Eve or Napoleon & Josephine (soon to be changed): as well as cocktails customized to guests’ preferences, selecting their preferred spirit, fruit and herbs to concoct their own cocktail.

We enjoyed chef Bentley’s focus on casual dining in Tulum, ordering pleasant but simply presented tasty falafel and hummus, tasting deliciously fresh ingredients and appreciating the confident cooking techniques; then we savored a long shrimp, enhanced by a delightful mayonnaise; and completed our starters tasting with a yummy fresh tuna salad.

Consequently, we each chose our main course: Diego ordered a pork dish, crusted Pancetta, with mustard seeds, carrot puree, Brussel sprouts and sauce. He loved his dish and let me taste a small portion; though pork is not a favorite of mine, I must say that it was one of the best pork dishes I have ever tasted.

Without a doubt, Mi Amor by Paul Bentley is one of my favorite casual yet fine dining restaurants in Tulum, set in an elegant and spectacular setting, where romance can be enhanced by a very satisfying culinary experience.

The Mi Amor, by Paul Bentley’s restaurant creative cuisine, its modern and casual dining ambiance, an excellent level of service and fair pricing is a must culinary experience for Foodies visiting Tulum.
